Dice the onion.

Sauté the diced onions in a pan until caramelized.

Cook the ground beef in a separate pan, season with salt and pepper.

Add ketchup, mustard, pickles, and Worcestershire sauce to the cooked ground beef.

Mix the beef mixture well.

In a bowl, combine mayonnaise, caramelized onions, ketchup, mustard, and pickles.

Mix all ingredients for the sauce until well combined.

Lay out a sheet of puff pastry on parchment paper.

Place two portions of the beef mixture on the puff pastry, leaving space between them and around the edges.

Top each beef portion with two slices of cheese.

Whisk an egg yolk.

Brush egg wash around the edges of the puff pastry and between the beef portions.

Press down the edges with a fork to create a crimped seal.
