Dry roast the onion, spring onion, garlic, shallots, and ginger until beautifully charred.

Add gochujang and sesame oil to the roasted vegetables and mix until combined.

Pour in water and soy sauce, then add miso paste and simmer with a lid on.

Melt butter in a separate pot.

Add finely chopped garlic, soy sauce, and miso paste to the butter and mix.

Add washed white jasmine rice and water to the pot and simmer with the lid ajar until the liquid has evaporated and the rice is fluffy.

In a bowl, mix gochujang, soy sauce, miso, honey, and pepper for the chicken marinade.

Add chicken breast to the marinade and toss to coat.

Cook the marinated chicken in a non-stick pan with neutral oil for 6-8 minutes on each side.

Add any remaining sauce to the chicken when it's almost done cooking.

In the same pan, fry green beans and spring onion until charred, adding more oil if necessary.

Serve the rice in a bowl, pour the broth through a sieve around it, and top with the cooked chicken, green beans, and spring onion.

Garnish with toasted sesame seeds and finely chopped spring onion.
