Directions

  1. 1Toast rolled oats in the oven at 325°F (160°C) for 8-10 minutes. Let cool.
  2. 2Roughly chop almonds and peanuts.
  3. 3Combine chopped almonds, peanuts, brown rice crisps, chia seeds, toasted oats, and sea salt in a bowl and mix well.
  4. 4In a pan, add honey, peanut butter, coconut oil, and vanilla extract. Mix until combined.
  5. 5Pour the wet mixture into the bowl with the dry ingredients and combine.
  6. 6Melt chocolate with coconut oil in a double boiler.
  7. 7Pour and spread the melted chocolate evenly into the bottom of a baking dish lined with parchment paper.
  8. 8Sprinkle the granola mixture on top of the chocolate layer and press it down firmly to make sure it's nice and firm.
  9. 9Drizzle some chocolate on top of the granola mixture.
  10. 10Let the bars cool off in the fridge.
  11. 11Cut the cooled granola slab into individual bars.

  • 0.75 cup organic rolled oats (lightly toasted)
  • 0.33 cup organic brown rice crisps
  • 1 tbsp chia seeds
  • 0.5 cup organic peanut butter (smooth + unsweetened)
  • 0.33 cup organic honey
  • 2.5 tbsp organic refined coconut oil
  • 0.75 tsp organic vanilla extract
  • 0.25 tsp sea salt
  • 0.66 cup dark chocolate chips or chunks (70%+ cacao)
  • 0.75 tsp coconut oil (optional)
