Season lamb shanks with salt and pepper, sear in olive oil.

Add onion, garlic, bay leaves, cinnamon sticks, cardamom pods, and water to the pot. Let the shanks boil for about 2 hours, or until super tender.

Chop a large onion and remove the outer shell of 2 pounds of broad beans.

Chop a massive bunch of dill.

Broil the lamb shanks in the oven to get a deeper color and hold their shape.

Strain the liquid from the pot and set aside.

Sauté the chopped onion in ghee.

Add the beans and dill, then add rice and toast it for a minute.

Add about 2 1/2 cups of stock for each cup of rice and stir.

Let the rice cook on low heat for about 30 minutes.

Mix yogurt with grated garlic, dill, salt, and pepper.

Spread the cooked rice on a serving plate, top with the lamb shanks, and enjoy.
