Curry Steam Snapper

Directions

  1. 1Pour cooking oil into a pot.
  2. 2Add curry powder to the oil and mix.
  3. 3Add sliced onions, garlic, bell peppers, and thyme to the pot.
  4. 4Mix the seasonings and curry in the pot.
  5. 5Add chopped pumpkin and corn to the pot.
  6. 6Add chopped carrots to the pot.
  7. 7Mix the vegetables in the pot.
  8. 8Prepare coconut milk by mixing two packs of coconut milk powder with hot water.
  9. 9Pour the prepared coconut milk into the pot with the vegetables.
  10. 10Add a dollop of butter to the pot.
  11. 11Cover the pot and let it simmer.
  12. 12Add pumpkin flavored soup mix, straining it as you add it.
  13. 13Mix the soup mix into the simmering vegetables.
  14. 14Add Dash salt-free garlic & herb seasoning for flavor.
  15. 15Grind black peppercorns into the pot.
  16. 16Cover the pot again and let it simmer.
  17. 17Test the pumpkin with a fork to ensure it is tender.
  18. 18Place seasoned snapper fish into the pot, ensuring pimento seeds are in the stomach of the fish.
  19. 19Spoon the gravy over the fish.
  20. 20Cover the pot and let the fish simmer.
  21. 21Add water crackers to the pot.
  22. 22Cover the pot and allow the crackers to soften.
  23. 23Remove fish for those who prefer it without okra.
  24. 24Add okra to the remaining fish and vegetables in the pot.
  25. 25Serve the Curry Steam Snapper with rice.
