Take 1 cup of soaked chana and add it to a pressure cooker.

Add 1 inch of cinnamon, ½ tsp of cloves, 1 black cardamom, 1 tea bag, 1 tsp of salt, and ¼ tsp of baking soda.

Add 3 cups of water and pressure cook for 5 whistles.

Once the pressure settles, open the lid and confirm the chana is cooked well.

Take half a cup of the cooked chana and add it to a mixer.

Add some water and blend to a smooth paste.

Heat 2 tbsp of oil and 2 tbsp of ghee in a large kadai.

Add 1 tsp of cumin and 1 bay leaf.

Sauté on low flame until aromatic.

Add ½ tsp of turmeric, 1.5 tsp of chili powder, 1 tsp of coriander powder, ½ tsp of cumin powder, and 2 tbsp of chana masala.

Sauté on low flame until aromatic.

Add 1.5 cups of tomato puree and cook well until it thickens and oil separates.

Add the boiled chana paste and cook well until the oil separates.

Add the boiled chana with the water.

Mix well to combine and ensure the flavours are absorbed.

Adjust the consistency to your liking.

Add ½ tsp of salt and simmer for 10 minutes, or until oil separates.

For the tadka, heat 2 tbsp of ghee in a small pan.

Add ½ tsp of cumin and allow it to splutter.

Add 1 inch of julienned ginger, 3 slit green chilies, and a pinch of chili powder.

Sauté on low flame until aromatic.

Pour the tadka over the chana masala.

Garnish with 2 tbsp of chopped coriander and 2 tbsp of crushed kasuri methi.

Mix well and serve hot.
