Dindigul Style Mushroom Biriyani

Directions

  1. 1Add star anise, green cardamom, and black peppercorns to a grinder.
  2. 2Grind the spices.
  3. 3Chop onions using a chopper.
  4. 4Chop tomatoes.
  5. 5Grind some ingredients into a paste.
  6. 6Chop coriander.
  7. 7Heat ghee in a large pot.
  8. 8Add chopped onions to the pot and sauté.
  9. 9Add chopped tomatoes, green chilies, mint leaves, and bay leaves to the pot.
  10. 10Add garam masala and red chili powder to the pot.
  11. 11Add the ground paste and curd to the pot and mix well.
  12. 12Add mushrooms to the pot and mix with the spices.
  13. 13Pour water into the pot.
  14. 14Add rice to the pot.
  15. 15Stir the rice and ingredients in the pot.
  16. 16Cover the pot and cook.
  17. 17Place a banana leaf over the rice before covering for dum cooking.
  18. 18Once cooked, fluff the biryani with a spatula.
  19. 19Add a spoonful of ghee to the biryani.
  20. 20Fluff the biryani again to mix the ghee.
  21. 21Serve the biryani by pressing it into a bowl and then plating it on a banana leaf.
  22. 22Garnish with boondi raita and mint chutney.
