Thai Basil Pork Stir-Fry

Directions

  1. 1Prepare the seasoning sauce by combining light soy sauce, dark soy sauce, oyster sauce, fish sauce, and sugar in a bowl.
  2. 2Heat a little oil in a wok over medium to high heat.
  3. 3Add the minced garlic, finely chopped red onion, and sliced Thai chilies to the wok and stir-fry for 2 minutes until fragrant.
  4. 4Increase the heat, add the pork mince, and break it up with a spatula or wooden spoon, cooking until it starts to brown (3-5 minutes).
  5. 5Add the prepared seasoning sauce and chicken stock to the pork mince.
  6. 6Stir-fry until the sauce has thickened, about 2 minutes.
  7. 7Toss in the Thai basil leaves and extra chili if desired.
  8. 8Crack an egg into a separate pan with a bit of oil and fry it until the whites are set and the yolk is still gooey.
  9. 9Serve the stir-fry with steamed jasmine rice.
  10. 10Place the gooey fried egg on top of the rice and stir-fry.
  11. 11Garnish with fresh Thai basil.

  • 1 cup Thai basil leaves, packed
