Directions
1
Prepare the short-grain sushi rice according to package instructions or in a rice cooker.
2
Prep your fillings: air fry chicken tenders if using, or drain tuna and mix with mayo or yogurt, or slice smoked/cooked salmon.
3
Slice the spring onions.
4
Construct the sushi by layering the avocado and chosen protein in a greased or cling-wrap lined container.
5
Add the cooked rice on top of the filling and press firmly with a utensil or wet hands.
6
Top with a piece of nori cut to size, then transfer onto a plate and slice with a sharp knife.
Ingredients
1/2 cup short-grain sushi rice
1 protein of choice (crispy chicken, tuna, or salmon)
1/2 avocado
2 tbsp cream cheese
1/2 nori sheet
spring onion (optional)
roasted sesame seeds (optional)
sriracha mayo (optional)
teriyaki sauce (optional)
Equipment
rice cooker
air fryer
container
knife
Tips
For a fibre boost, replace 1/3 of the white rice with brown rice.
Use microwave-style rice for convenience.
If pregnant, avoid refrigerated smoked salmon unless heated until steaming hot.
You can use an ice cube tray to form the sushi.
