1Cook the bacon until crispy, crumble it, and set aside.
2Melt butter in a large pot.
3Add onion and cook for 3–4 minutes.
4Add garlic and cook for 30 seconds.
5Add potatoes, chicken broth, Cajun seasoning, paprika, black pepper, and salt. Bring to a boil, then reduce heat and simmer for 15–20 minutes, until potatoes are tender.
6Mash some of the potatoes with a masher, leaving some chunks for texture.
7Stir in heavy cream and simmer for another 3–5 minutes.
8Add cheddar cheese and stir until completely melted and creamy.
9Serve hot and top with crispy bacon, green onions, parsley, and a sprinkle of Cajun seasoning.
