Directions
- 1Shred the chicken.
- 2Mix the shredded chicken with enchilada sauce, cream cheese, and black beans.
- 3Spray a cookie sheet.
- 4Layer 6 tortillas on the cookie sheet.
- 5Grate half the cheddar cheese (2oz) over the tortillas.
- 6Spoon the chicken mixture over the grated cheese.
- 7Place another 2 tortillas on top.
- 8Fold the sides in to create a closed envelope.
- 9Spray the top with more cooking spray.
- 10Place another cookie sheet on top to weight it down.
- 11Bake for 25 minutes at 400°F.
