Chipotle Chicken Linguini

Directions

  1. 1Season chicken breast with salt, pepper, garlic, and paprika.
  2. 2Blend chipotle peppers in adobo with honey.
  3. 3Massage the chicken pieces with the chipotle and honey mixture.
  4. 4Heat a stainless steel pan until nice and hot.
  5. 5Add oil to the pan when you see a light shimmer.
  6. 6Drop in the chicken and get a nice crust.
  7. 7Transfer the chicken to the oven at 350 degrees to finish cooking.
  8. 8Add chopped onion to the pan to release moisture and scrape the bottom of the pan to deglaze.
  9. 9Once the onions have sweat, add minced garlic.
  10. 10Add grass-fed butter to the pan.
  11. 11Add the same blended chipotle peppers used on the chicken to the pan.
  12. 12Once the mixture looks like a paste, add heavy cream.
  13. 13(Optional) Blitz the sauce to make it nice and creamy.
  14. 14When the sauce lightly bubbles, kill the heat and add Italian snow (Parmesan cheese).
  15. 15Add al dente linguini pasta to the sauce.
  16. 16Slice the cooked chicken and slide it onto the pasta.
  17. 17Finish with a little more Parmesan cheese.
  18. 18Add greens.

  • 2 tbsp honey
  • 1 small onion, chopped
  • 5 cloves garlic, minced
  • 2 tbsp butter
  • 1 pint heavy cream
  • 16 oz dry linguini, boiled
  • Parmesan cheese
  • oil
  • greens

Tips

  • For the chicken, get a nice crust on the outside and then finish cooking it in the oven.
  • The blended chipotle peppers in adobo and honey are used both for seasoning the chicken and for the sauce.
  • You can blitz the sauce to make it extra creamy.
  • Timing is key so the chicken and pasta finish cooking around the same time.
