  1. 1For every 1 cup of all-purpose flour, remove 2 tablespoons and replace that with cornstarch. This makes 1 cup of cake flour.

  3. 3To make buttermilk, use 1 cup of regular milk and 1 tablespoon of lemon juice or vinegar.
  4. 4To make icing sugar from granulated sugar, place it into a blender or food processor and process until it reaches a fine, dusty consistency.
  5. 5To make light brown sugar, use 1 cup of granulated sugar and 1/2 tablespoon of molasses.
  6. 6To make medium brown sugar, use 1 cup of white sugar and 1 tablespoon of molasses.
  7. 7To make dark brown sugar, use 1 cup of white sugar and 1 1/2 tablespoons of molasses.
