Make the marinade with minced garlic, minced shallots, monkfruit sweetener, avocado oil, chicken bouillon, black pepper and salt.

Marinate the salmon steaks for at least 30 minutes.

Transfer the marinated salmon steaks to a clay pot, sauce pan or chef's pan.

Cook the salmon for 1 or 2 minutes on each side.

Add 1 cup of water and 1 TBSP fish sauce.

Bring the liquid to a boil and then reduce heat to medium and simmer for 15-20 minutes.

Garnish with chopped scallion.

Serve with rice/ cauliflower rice, steamed okra and Thai eggplant.

2 salmon steaks
2 TBSP minced garlic
2 minced shallots
4 TBSP sugar of choice (monkfruit sweetener, coconut sugar, sugar)
3 TBSP avocado oil
2 TBSP chicken bouillon/ chicken powder
2 tsp black pepper
0.5 tsp salt
1 cup water
1 TBSP fish sauce
2 TBSP dark soy sauce
chopped scallion

Tips
Spoon the sauce over your salmon steaks from time to time while simmering.
If the sauce thickens too much or starts to burn, add some additional water.
