Confit Garlic Dip
Serves 1
Directions
- 1Place peeled garlic cloves in a pan and cover with olive oil.
- 2Cook over low heat until the garlic cloves are tender and poached.
- 3Add a spring of rosemary, lemon peel, olives, a splash of balsamic vinegar, crumbled feta, and chopped parsley to the warm oil and garlic mixture.
- 4Finish with a sprinkle of red pepper flakes and a drizzle of honey.

- 1 bunch garlic clove, peeled
- to cover olive oil
- 1 sprig fresh rosemary
- lemon, peeled
- 1 cup castelvetrano olive, quartered
- 1 splash balsamic vinegar
- 1 handful feta cheese, crumbled
- 1 handful fresh parsley, chopped
- 1 pinch red pepper flake (optional)
- 1 drizzle honey (optional)
