Directions

  1. 1Warm the vinegar on the stove for about 5 minutes with the pimento, sugar, and salt, just enough to melt everything down and infuse the flavor.
  2. 2Let it cool completely before adding all the veggies to the jar so they keep their crunch.
  3. 3Once it’s all combined, give it a shake and let it sit overnight.

Ingredients

  • 1 null large onion
  • 6 null scotch bonnets
  • 2 null carrots (julienne cut)
  • 1 null cho cho (sliced thin)
  • 4 null cloves garlic (crushed)
  • A few sprigs thyme
  • 1 tbsp sugar
  • 1 tsp salt (or to taste)
  • 1 tbsp pimento seeds
  • null White vinegar (enough to cover everything in the jar)

Tips

  • The longer it sits, the better it gets.
