Wash and rinse dried black beans.

Pressure cook the beans with 4 cups of water, 2 bay leaves, and 1 tsp salt for 35 minutes.

Sauté diced onion and green bell pepper in a saucepan.

Add cumin, oregano, and garlic to the sautéed vegetables.

Mix until fragrant.

Deglaze the pan with 1/4 cup of cooking wine.

Once the beans are cooked and soft enough to squish, add the sofrito into the pot.

Add tomato sauce, white vinegar, and white sugar.

Simmer on low for 15 to 20 minutes, or until the desired thickness is reached.

1 tsp oregano
0.25 cups dry cooking wine
1 tsp tomato sauce or ketchup
1 tbsp white vinegar
2 tsp white sugar
1 salt & pepper
