Authentic Cuban Black Beans

Directions

  1. 1Wash and rinse dried black beans.
  2. 2Pressure cook the beans with 4 cups of water, 2 bay leaves, and 1 tsp salt for 35 minutes.
  3. 3Sauté diced onion and green bell pepper in a saucepan.
  4. 4Add cumin, oregano, and garlic to the sautéed vegetables.
  5. 5Mix until fragrant.
  6. 6Deglaze the pan with 1/4 cup of cooking wine.
  7. 7Once the beans are cooked and soft enough to squish, add the sofrito into the pot.
  8. 8Add tomato sauce, white vinegar, and white sugar.
  9. 9Simmer on low for 15 to 20 minutes, or until the desired thickness is reached.

  • 1 tsp tomato sauce or ketchup
  • 1 tbsp white vinegar
  • 2 tsp white sugar
  • 1 salt & pepper
