Mini Strawberry Cheesecakes
Directions
- 1Crush graham crackers into crumbs using a food processor.
- 2Combine graham cracker crumbs with melted butter and mix well.
- 3Press the mixture into the bottom of lined muffin cups.
- 4Beat cream cheese and eggs until smooth, then add sweetened condensed milk and mix.
- 5Pour the mixture into the prepared muffin cups.
- 6Bake at 350°F for 15-18 minutes, or until set.
- 7Make strawberry sauce by heating strawberries, sugar, and lemon juice in a saucepan until thickened, then refrigerate.
- 8Make whipped cream by combining heavy cream, vanilla, and sugar until fluffy.
- 9Once the cheesecakes are cool and chilled, top them with strawberry sauce, whipped cream, and a strawberry half.
