Directions

  1. 1Boil eggs for six minutes to achieve a soft yolk, then shock them in an ice bath.
  2. 2Flatten out the sausage.
  3. 3Set up a breading station with flour in one bowl, whipped eggs in a second dish, and a combination of seasoned and Panko breadcrumbs in a third dish.
  4. 4Lightly coat the soft-boiled eggs in flour.
  5. 5Wrap each floured egg with the flattened sausage, being careful not to break the egg.
  6. 6Coat the sausage-wrapped eggs first in flour, then in the whipped egg, and finally in the breadcrumbs, ensuring an even coating.
  7. 7Carefully lower the breaded Scotch eggs into hot oil and fry until golden and crispy on the exterior.
  8. 8Transfer the fried Scotch eggs to an oven and bake for 10 minutes to finish cooking the sausage.
  9. 9Serve on a bed of lettuce with sliced tomatoes and mustard for garnish, or with a side salad of avocado and tomato.
