Serves 4

Directions

  1. 1Whisk the flour, eggs, and milk together in a bowl until smooth to create the batter.
  2. 2Refrigerate the batter to allow it to settle for a minimum of 2 to 3 hours, ideally overnight.
  3. 3Place the sausages and oil in an oven dish and heat in the oven until the oil is spitting hot.
  4. 4Pour the chilled batter over the hot sausages and return the dish to the middle of the oven.
  5. 5Bake for 30 minutes, lowering the temperature slightly partway through.

Ingredients

  • 6-8 whole pork sausage link
  • 3-4 tbsp olive or vegetable oil
  • 160 g plain all-purpose flour
  • 4 whole large egg
  • 220 ml semi-skimmed milk
  • 1/2 tsp salt (optional)
  • 1/2 tsp white pepper (optional)

Equipment

Tips

  • Letting the batter rest for a few hours (or overnight) is the secret to a beautifully risen Yorkshire pudding.
  • Ensure your oil is spitting hot before adding the batter.
  • The recipe can be served with rich onion gravy or baked beans.
  • Let the finished dish cool for a few minutes before serving to avoid burns.
