Directions

  1. 1Heat oil in a large pan over high heat, add the beef, season with salt, and brown the meat on all sides.
  2. 2Remove the browned beef from the pan and set aside in a bowl.
  3. 3Add the diced onion to the same pan and cook until translucent.
  4. 4Add the garlic and cook for one minute.
  5. 5Stir in the plain flour and cook for one minute to remove the raw flavor.
  6. 6Pour in the beef stock and stout, stirring well until thickened.
  7. 7Add the tomato puree and Worcestershire sauce and stir to combine.
  8. 8Return the beef and its juices to the pan and add the bay leaves, ensuring they are submerged.
  9. 9Simmer on low heat until the beef is tender.
  10. 10Remove the bay leaves from the stew.
  11. 11Turn off the heat and stir in the Stilton cheese.

Ingredients

  • 1.5 lb shoulder of beef
  • 55 g stilton cheese (optional)
  • 1 whole onion, diced
  • 3 whole garlic clove, chopped
  • 2 tbsp plain flour
  • 400 ml beef stock
  • 300 ml stout
  • 1 tbsp tomato puree
  • 1 tbsp worcestershire sauce
  • 2-3 whole bay leaf (optional)
  • to taste vegetable oil
  • to taste salt (optional)
