1Knead 500 gr of flour, 310 ml of warm water, 10 gr of salt, 18 gr of sugar, and 1 tbs of olive oil for 10 minutes.
2Portion the dough into 120 gr balls, brush with oil, and let them rest for 30 minutes.
3In a food processor, mix 3 tomatoes, 1 red pepper, 1 green pepper, 1 red onion, 1 garlic clove, 1 tbs of tomato paste, salt, pepper, 1 tsp of paprika, and 1/2 tsp of 7 spice.
4Mix the ground beef, ground lamb, lamb fat, and mixed vegetables and spices in a bowl.
5Stretch the dough using flour and a rolling pin to 1 mm thickness.
6Spread a thin layer of the meat mixture over the dough on a baking sheet lined with baking paper.
7Bake at 400 F for 8-10 minutes.
8Garnish with onions, parsley, sumac, and fresh lemon juice.
