Soak your soya chunks in hot water.

Puree your tomatoes and keep them aside.

Squeeze out the excess water from the softened soya chunks.

Add onions, bell peppers, yogurt, and a bunch of masalas (as mentioned in the caption) to the soya chunks.

Pour in some mustard oil and fry this mixture along with some roasted besan for around 5 to 7 minutes.

Take the fried mixture off the pan.

In the same pan, heat some more oil and add some cumin seeds, bay leaves and onions.

Fry them really well.

Add in your tomato puree.

Once this leaves oil on sides, add in your hot water along with the soya chunks.

Garnish it with some kasuri methi and coriander leaves.

1.5 cups soya chunks

1 onion, diced
1 green bell pepper, diced
0.5 cup thick yogurt

0.25 tsp turmeric
2 tsp red chilli powder
1 tsp coriander powder
0.5 tsp garam masala
2 tbsp mustard oil

2 tbsp roasted besan
0.5 tsp cumin seeds
2 bayleaves
2 small onions, finely chopped
1 large tomato, pureed
0.5 tsp red chilli powder
0.5 tsp coriander powder
