Marinate shrimp with soy sauce, black pepper, onion powder, garlic, and chili flakes.

Mix until the shrimp color changes.

Make the Yum Yum sauce by mixing light mayo, low sugar ketchup, sriracha, rice vinegar, ginger, and paprika.

Add water to the sauce for desired consistency and mix until completely smooth.

Add light butter on medium heat.

Cook the shrimp for 2 minutes on each side until golden brown and juicy.

Set the cooked shrimp aside.

Add chopped garlic and green onion to the pan and cook for 2 minutes.

Add peas and carrots to the pan.

Mix the vegetables.

Add eggs, stir, and cook until scrambled.

Add day-old cooked rice with more soy sauce, oyster sauce, and light butter.

Mix everything well.

Add the cooked shrimp back in with green onion.

22.5 g Light Butter for cooking
120 g Light Mayo
37.5 g Ketchup
37.5 g Sriracha
37.5 ml Rice Vinegar
0.75 Tsp Paprika
0.75 Tsp Ginger Powder
1.5 Tbsp Chopped Garlic
120 g Chopped Green Onion
150 g Frozen Carrots
150 g Frozen Peas
6 Eggs
810 g Day Old Cooked White Rice
22.5 ml Soy Sauce
45 g Oyster Sauce
22.5 g Light Butter
Green Onion for Garnish
Tips
You can use raw or par cooked shrimp, just make sure you cook the latter for less time
Marinate for 30mins for enhanced flavor
You can use cooking spray for cooking to lower calories
If you don’t have day old rice, just cook some rice and place in the freezer to cooldown
Make the yum yum sauce in batches to store for other meals too!
You can reheat in a microwave or pan and only serve the sauce when ready to eat
