No Mayo Chicken Salad

Directions

  1. 1Pan sear 2 to 3 chicken breasts in a hot pan on both sides.
  2. 2Make the creamy avocado sauce by adding two avocados into a blender.
  3. 3Add one cup of non-fat plain Greek yogurt to the blender.
  4. 4Add about half a cup of sour cream to the blender.
  5. 5Add some garlic cloves and parsley to the blender.
  6. 6Drizzle about half a cup of Dijon mustard into the blender.
  7. 7Drizzle about half a cup of olive oil into the blender.
  8. 8Squeeze the juice from one lemon into the blender.
  9. 9Add some salt and pepper to the blender.
  10. 10Add chicken bouillon, smoked paprika, Creole seasoning, and onion powder to the blender.
  11. 11Blend everything until you get a creamy texture like mayonnaise.
  12. 12Once the chicken is cooked, shred them using a hand mixer.
  13. 13Thinly chop some celery, one red onion, and two green onions.
  14. 14Add the chopped celery, red onion, and green onions to the shredded chicken.
  15. 15Pour the creamy avocado sauce over the chicken and vegetables.
  16. 16Mix everything together until well combined.
  17. 17Serve the chicken salad with chips or make sandwiches out of it.
  18. 18Optionally, sprinkle some paprika on top for garnish.
