Turkey Tzatziki Meatballs & Pita

Directions

  1. 1Pour white wine vinegar, red wine vinegar, and sugar over sliced red onions in a glass container
  2. 2Add ground turkey, red onion, breadcrumbs, cottage cheese to a bowl
  3. 3Crack an egg into the bowl
  4. 4Grate the garlic into the bowl
  5. 5Add garlic powder, onion powder, Peruvian seasoning, red pepper flakes, cayenne, salt, pepper, and parsley
  6. 6Mix the ingredients together
  7. 7Form the mixture into meatballs
  8. 8Sear the meatballs on all sides with avocado oil in a pan
  9. 9Place meatballs into sheet pan into oven and cook until it’s reached internal temperature of 165 degrees
  10. 10Add Greek yogurt to a bowl
  11. 11Grate garlic into the yogurt
  12. 12Add dill, lemon zest, lemon juice, olive oil, salt, and pepper
  13. 13Mix all ingredients together
  14. 14Add Greek yogurt, bread flour and baking powder to a bowl
  15. 15Mix the ingredients together and knead until smooth adding more flour if necessary
  16. 16Roll out dough
  17. 17Cook on medium heat with olive oil until golden brown and flip when it starts to bubble
  18. 18Add tzatziki, meatballs, grape tomatoes, chopped zucchini, chopped red onions, pickled onions, and lemon juice to pita
