Olive Oil Cake with Rhubarb

Directions
- 1Set the oven to 350°F.
- 2Prepare the cake rounds with parchment paper.
- 3In a mixing bowl, add olive oil, sugar, orange zest, and eggs.
- 4Weigh the flour and sift it.
- 5Add baking powder and salt.
- 6Mix the flour with the wet ingredients.
- 7Slowly add the whipped cream.
- 8Pour the mixture into prepared cake rounds.
- 9Place into the oven for 20 minutes.
- 10Add rhubarb, sugar, a pinch of salt, the zest of clementines, and ginger to the pot.
- 11Cut open the vanilla bean and add the pods to the pot.
- 12Cook down on the stove.
- 13Put the whip on one of the cake halves and spread.
- 14Add rhubarb compote.
- 15Add the second cake on top.
- 16Add icing sugar.
