Tips
For regular pitas, flatten each dough ball, place them on a baking sheet lined with parchment paper, and let them rise for 20-25 minutes under cover.
Preheat the oven to 250 degrees Celsius, preferably with a baking stone or inverted baking sheet inside.
Bake the pitas until they are puffed up and lightly browned. The best way is to place the pitas directly into a nylon bag and seal it, this will ensure their softness.
For hamburger buns, place the dough balls on a baking sheet lined with parchment paper and cover them to rise for 30 minutes.
When the buns are puffed up, bake them in an oven preheated to 180 degrees Celsius for 20 minutes until they are golden brown.
For zaatar buns, roll out each ball into a pita, place them all on a baking sheet, prick with a fork, spread zaatar mixed with olive oil in the center of the pita, leaving the edges clean.
Bake the pitas in an oven preheated to at least 200 degrees Celsius for 15 minutes.
