Directions

  1. 1Cut a kilo of dough.
  2. 2Divide the dough into multiple balls weighing 100 grams.
  3. 3For simple pitas, simply roll out the balls.
  4. 4Shape the dough balls.
  5. 5Use a fork to create small indents.
  6. 6Spread the zaatar mix on top.
  7. 7Cover the hamburger buns.
  8. 8Brush with egg.
  9. 9Sprinkle sesame seeds.

Tips

  • For regular pitas, flatten each dough ball, place them on a baking sheet lined with parchment paper, and let them rise for 20-25 minutes under cover.
  • Preheat the oven to 250 degrees Celsius, preferably with a baking stone or inverted baking sheet inside.
  • Bake the pitas until they are puffed up and lightly browned. The best way is to place the pitas directly into a nylon bag and seal it, this will ensure their softness.
  • For hamburger buns, place the dough balls on a baking sheet lined with parchment paper and cover them to rise for 30 minutes.
  • When the buns are puffed up, bake them in an oven preheated to 180 degrees Celsius for 20 minutes until they are golden brown.
  • For zaatar buns, roll out each ball into a pita, place them all on a baking sheet, prick with a fork, spread zaatar mixed with olive oil in the center of the pita, leaving the edges clean.
  • Bake the pitas in an oven preheated to at least 200 degrees Celsius for 15 minutes.
