2Combine ground beef with parsley, lemon zest, onion powder, garlic powder, kosher salt, black pepper, cumin, smoked paprika, coriander, cinnamon, olive oil, and honey or date syrup, mixing gently until just combined.
3Press the mixture onto a sheet pan lined with parchment paper, about 3/4” thick.
4Score the pressed mixture into rows to form kebabs.
5Bake for about 12-14 minutes until just cooked.
6Spoon off any excess fat from the sheet pan.
7Broil for 2-3 minutes until the kebabs are browned.
8For the quick yogurt sauce, mix Greek yogurt, lemon juice, olive oil, honey, salt, pepper, and finely chopped dill.
9Serve the kebabs in pita bread with yogurt sauce, tomatoes, cucumbers (seasoned with a pinch of salt and olive oil), pickled red onion, and chili oil.
