Slice chicken breast in half to get large chunks.
To start the marinade, combine olive oil, full-fat yogurt, tomato paste, fresh lemon juice, garlic paste, cumin, paprika, chili powder, oregano, thyme, salt, and pepper.
Optionally, add cardamom, clove, and nutmeg to the marinade.
Mix the spices into the marinade.
Drop in the cubed chicken breast and mix thoroughly, ensuring every piece is coated.
Cover and marinate the chicken for no less than 12 hours.
For the slaw, combine cabbage and carrots with mayo, white vinegar, a pinch of sugar, and salt.
Massage the slaw ingredients together with a glove.
When ready to cook, thread the shish tawook onto skewers.
Cook the chicken until it peels off on its own and reaches exactly 160 degrees, then remove from heat to avoid overcooking.
Prepare Batata Harra fries by air frying frozen fries.
Cook down 2 tbsp oil and 1/4 cup hot pepper paste, then add a squeeze of lemon and a handful of cilantro, and toss with the fries.
To make the finishing oil, cook down 2 tbsp hot pepper paste with 12 fl oz neutral oil, then add 2 tbsp zaatar, 1 tsp paprika, 1 tsp chili powder, salt, and pepper.
On a flat top, place a large pita.
Spread a nice smear of toum (garlic paste) on the pita.
Add the cooked shish tawook chicken.
