French Onion Soup

Directions

  1. 1Slice four Spanish onions to about this thickness.
  2. 2Add a little bit of olive oil and a big knob of homemade ghee to a pot and melt it.
  3. 3Add the sliced onions to the melted ghee and olive oil.
  4. 4Add a little bit of ocean to draw out water and speed up caramelization.
  5. 5Start cooking the onions on high heat.
  6. 6When you see some color, scrape the bottom of the pot.
  7. 7Reduce the heat and continue caramelizing until the onions are deep, rich, and golden brown, even further than golden brown.
  8. 8When the onions are 90% done, add the garlic and fresh thyme.
  9. 9Once the garlic becomes translucent, add two bay leaves.
  10. 10Deglaze the bottom of the pot with some whiskey, picking up all the flavor.
  11. 11Add chicken stock and beef stock to balance the flavors.
  12. 12Add black pepper.
  13. 13Bring the soup to a boil and then simmer for 30 minutes.
  14. 14Add a splash of sherry vinegar.
  15. 15Toast bread.
  16. 16Place toasted bread on top of the soup.
  17. 17Put cheese on the soup, then add a little more cheese.
  18. 18Broil the soup until the cheese is melted and bubbly.

  • 0.25 cup whiskey
  • 20 oz chicken stock
  • 20 oz beef stock
  • 0.5 tsp black pepper
  • 1 tbsp sherry vinegar
  • fresh grated Gruyère
  • toasted baguettes
