1Add 2 roma tomatoes, a small piece of white onion, 2 garlic cloves, 1 tablespoon of chicken bouillon, 1 tablespoon of tomato bouillon, and 1 cup of water to the blender cup.
2Blend the ingredients until smooth.
3Set a pan to low-medium heat and add some oil.
4Add 2 cups of Jasmine rice to the hot oil and fry for a couple of minutes until golden.
5Once the rice is golden, add the blended salsa through a strainer into the pan.
6Add 2 cups of water to the pan.
7Give it a mix and check for more chicken bouillon if needed.
8Add one jalape
o to the pan for a subtle spicy flavor.
9Cover the pan and cook for 20 minutes on the lowest heat.
10After 20 minutes, open the pan, and the Mexican red rice is ready.
