Directions

  1. 1Clean and rinse the pinto beans, and pick out any that don't look right.
  2. 2In a pot, combine the beans, onion, jalapeño, garlic, and smoked ham hock.
  3. 3Add chicken bouillon and enough water to cover the beans.
  4. 4Bring the mixture to a boil, cover, reduce the heat to low, and simmer for 1 hour and a half.
  5. 5While the beans are simmering, slice a whole pack of bacon and cook covered until crispy.
  6. 6Remove the bacon from the pan and set it aside, reserving most of the bacon grease.
  7. 7In the bacon grease, sauté diced onions, jalapeño, and cilantro stems.
  8. 8After 10 minutes, add minced garlic and cook for a couple of minutes.
  9. 9Add diced tomatoes and cook covered for 10 minutes.
  10. 10Remove the cover and continue cooking until the mixture reaches a jam-like consistency.
  11. 11Remove the ham hock and jalapeños from the bean pot and set aside.
  12. 12Pull the meat off the ham hock, cut it into chunks and also pull the skin off and cut it into small pieces.
  13. 13Add the chopped ham hock, bacon, and the tomato-onion mixture to the bean pot.
  14. 14Stir well to combine.
  15. 15Add the juice and half of the canned diced jalapeños.
  16. 16Add a big handful of cilantro, stir, cover, and simmer for another half an hour.
  17. 17Serve the finished Frijoles Charros garnished with cilantro leaves.
