Puerto Rican Pichos de Pollo

Directions

  1. 1Soak wooden skewers in water for 30 mins.
  2. 2Cut chicken thighs into small pieces and place in large bowl.
  3. 3Add olive oil, all seasonings, sofrito, lime juice, minced garlic and cilantro to chicken and mix well.
  4. 4Cover with plastic wrap and set in fridge for 2 hours.
  5. 5In small pot, add guava paste and cook down until all lumps are gone.
  6. 6Add all the other ingredients for the guava bbq sauce.
  7. 7Mix well and let simmer for 5 minutes or until sauce thickens.
  8. 8Set sauce to side.
  9. 9Place chicken pieces onto skewers and place on parchment paper covered baking pan.
  10. 10Bake chicken at 400°F for 15 minutes.
  11. 11Flip chicken and bake again for 15 minutes.
  12. 12Take chicken out of oven and brush guava bbq sauce on both sides of chicken.
  13. 13Bake again for 5 minutes.
  14. 14Enjoy with toasted pan sobao (or any bread you like).

  • 0.5 cup guava paste
  • 0.25 cup bbq sauce
  • 0.25 cup ketchup
  • 1.5 tbsp light brown sugar
  • 2 tbsp apple cider vinegar
  • 0.25 cup water
  • 3 garlic cloves, minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp honey
  • 1.5 tbsp lime juice
  • Onion powder
  • Garlic powder
  • Paprika
  • Salt
  • Pepper
  • 2 lbs chicken thighs
  • 1.5 tbsp lime juice
  • 1 packet sazon
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp oregano
  • 1 tbsp adobo
  • 0.5 tsp salt
  • 2 tbsp sofrito
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • Cilantro
  • Skewers
  • Pan sobao
