Directions
1
Dredge your chicken thigh in flour, then egg, then corn flakes.
2
Put the chicken in your air fryer and spray with oil.
3
Cook the chicken at 385F for 16 minutes, flipping halfway through, until an internal temperature of 165F is reached.
4
In a pan, add sesame oil, replacement brown sugar, soy sauce, honey, minced garlic cloves, minced ginger, and water.
5
Mix well on medium heat and let the sauce reduce until thickened.
6
Slice cucumber and daikon.
7
Add 1 cup of low-calorie Greek yogurt, 2 to 3 tablespoons of honey, and salt to taste to the cucumber and daikon.
8
Optionally, add some fresh jalapeño for spice.
9
Shake the cucumber salad well.
10
Assemble the sandwich by placing the cooked chicken on a bun, topping with the cucumber salad, and drizzling with the lemon teriyaki sauce.
