Combine soy sauce, mirin, garlic, sake, and brown sugar, then mix thoroughly.

Pour your mixture into a pot.

Bring the sauce to a light boil and remove it after two minutes of simmering.

Lubricate your pan with oil.

Lightly brown your thinly sliced pork on both sides before removing it from the pan.

In the same pan, add your sauce.

Once the sauce starts to turn glossy, re-add your pork.

Cook until the sauce is starting to caramelize and stick to the pork.

Take your fresh bowl of rice and place your pork down.

You can optionally garnish with scallions and an egg yolk.

Blowtorch your pork to caramelize it some more.
