Directions

  1. 1Grind garlic, olive oil, salt and parsley in a pestle and mortar.
  2. 2In a bowl, whisk together egg yolks, lemon juice, Dijon mustard and sherry vinegar.
  3. 3Slowly stream in the neutral flavoured oil while whisking until mayonnaise forms.
  4. 4Add the garlic paste and check for seasoning.

Ingredients

  • 3 large garlic cloves
  • 1 tbsp olive oil
  • 1 pinch sea salt
  • 2 handfuls flat leaf parsley
  • 2 egg yolks
  • 1.5 tsp Dijon mustard
  • 1 squeeze lemon juice
  • 1 tsp sherry vinegar
  • 200 ml neutral flavoured oil
