Directions
- 1In a frying pan over medium high heat, add oil then add your beef and let sear for 2-4 minutes.
- 2Flip and cook for another 2-4 minutes.
- 3Break up the beef into small pieces and cook until completely brown.
- 4Add adobo sauce, garlic, cumin and salt and pepper.
- 5Set aside.
- 6In a pot over medium low heat, melt butter then add flour constantly stirring for 1 minute.
- 7Add your milk while whisking.
- 8Once you've added all your milk and the sauce is thickened, turn off the heat and add your cheese.
- 9Whisk until completely melted.
- 10Add cumin, garlic powder and paprika.
- 11Add salt and pepper. Keep warm and set aside.
- 12Scoop avocado into a bowl. Add salt and lime juice. Mash until smooth.
- 13Add tomatoes, onion, jalapeno and cilantro. Mix until combined.
- 14Layer chips then cheese, beef, tomatoes, jalapeno and repeat.
- 15Top with sour cream and guacamole.

- 1 cup cheddar cheese
- 1.5 Tbsp flour
- 1.5 Tbsp butter
- 1 cup milk
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 0.5 tsp cumin
- 1 ripe avocado
- 1 lime
- 0.25 cup chopped tomato
- 0.25 cup chopped onion
- 0.5 jalapeno chopped
- 1 Tbsp chopped cilantro
- 0 sour cream
- 0 thinly sliced jalapenos
- 0 diced tomatoes
- 0 tortilla chips
