Directions
- 1Thinly slice 3-4 large potatoes.
- 2Add potatoes to a bowl with 1 tbsp melted garlic butter and 2 tbsp taco seasoning; mix well.
- 3Spray a cupcake baking pan with olive oil spray.
- 4Add 1 tsp shredded pepper jack cheese to each cupcake slot.
- 5Layer potato slices in each slot.
- 6Top potatoes with more cheese.
- 7Bake uncovered at 400F for 35-45 minutes, until golden and crispy.
- 8Top with chipotle ranch and chives.
