Directions

  1. 1Thinly slice 3-4 large potatoes.
  2. 2Add potatoes to a bowl with 1 tbsp melted garlic butter and 2 tbsp taco seasoning; mix well.
  3. 3Spray a cupcake baking pan with olive oil spray.
  4. 4Add 1 tsp shredded pepper jack cheese to each cupcake slot.
  5. 5Layer potato slices in each slot.
  6. 6Top potatoes with more cheese.
  7. 7Bake uncovered at 400F for 35-45 minutes, until golden and crispy.
  8. 8Top with chipotle ranch and chives.
