Bloomin' Onion Wedges

Directions

  1. 1In a large bowl, whisk together buttermilk and eggs.
  2. 2Prep onions by slicing off the non-root end, carefully peeling, and using a sharp knife to cut into vertical wedges; keep pieces attached by the root, and gently press to separate sections. Coat onions in buttermilk and egg mixture and let rest for 10 minutes.
  3. 3Prepare the sauce by whisking milk, garlic powder, pepper, chipotle pepper, and mayonnaise in a small bowl.
  4. 4Combine flour, paprika, salt, pepper, garlic powder, and cayenne pepper in another bowl. Remove onions from buttermilk mixture, coat heavily with flour mixture, and move to a clean plate.
  5. 5Heat frying oil to 350 degrees Fahrenheit. Fry onions for about 4 minutes, or until golden brown.
  6. 6Remove onions, drain on a paper towel, and serve hot with dipping sauce
