Add one pound of lean ground chicken to a pan.

Break up and brown the ground chicken.

Season the cooked ground chicken with fennel seed, garlic powder, paprika, and salt to emulate the flavor of sausage.

Add two 16-ounce containers of low-fat cottage cheese to the pan with the chicken.

Stir the mixture until the cottage cheese melts and becomes smooth like cream cheese.

Add one can of Rotel diced tomatoes and green chilies to the pan.

Add one can of rinsed black beans to the mixture.

Pour in half a cup of yellow corn.

Add one fresh diced jalapeño, if desired.

Stir in one packet of taco seasoning.

Tips
You don't have to blend the cottage cheese beforehand because the curds will melt and become like cream cheese.
If kids are eating, you can omit the fresh diced jalapeño.
