Cowboy Queso

Directions

  1. 1Add one pound of lean ground chicken to a pan.
  2. 2Break up and brown the ground chicken.
  3. 3Season the cooked ground chicken with fennel seed, garlic powder, paprika, and salt to emulate the flavor of sausage.
  4. 4Add two 16-ounce containers of low-fat cottage cheese to the pan with the chicken.
  5. 5Stir the mixture until the cottage cheese melts and becomes smooth like cream cheese.
  6. 6Add one can of Rotel diced tomatoes and green chilies to the pan.
  7. 7Add one can of rinsed black beans to the mixture.
  8. 8Pour in half a cup of yellow corn.
  9. 9Add one fresh diced jalapeño, if desired.
  10. 10Stir in one packet of taco seasoning.
  11. 11Add one cup of reduced-fat shredded cheddar cheese to the mixture.
  12. 12Stir until the cheese is melted and fully incorporated, creating a thick and creamy texture.
  13. 13Sprinkle the remaining half cup of reduced-fat shredded cheddar cheese on top of the queso.
  14. 14Broil the queso in the oven on high for a few minutes until the cheese is melted and bubbly.
  15. 15Remove the queso from the oven.
  16. 16Garnish with fresh cilantro.
  17. 17Garnish with chopped red onion.
  18. 18Add a dollop of plain non-fat Greek yogurt on top.
  19. 19Serve with Quest protein chips for dipping.

  • 0.5 cup yellow corn
  • 1 fresh diced jalapeño
  • 1 packet taco seasoning
  • 1.5 cup reduced fat shredded cheddar cheese
  • cilantro
  • red onion
  • plain non-fat Greek yogurt

Tips

  • You don't have to blend the cottage cheese beforehand because the curds will melt and become like cream cheese.
  • If kids are eating, you can omit the fresh diced jalapeño.
