2On a rimmed baking sheet, toss together the chopped cauliflower, drained and pat dry chickpeas, extra virgin olive oil, paprika, salt, pepper, and minced garlic.
3Bake for 25 to 30 minutes, or until the cauliflower is tender and the chickpeas are crispy.
4Sprinkle ¼ cup grated parmesan cheese over the whole sheet and return to the oven for 5 minutes, or until the cheese is a bit melty and golden brown.
5Top with the grated zest and juice from ½ lemon and 2 Tbsp chopped Italian parsley.
