Beef and Broccoli Noodle

Directions

  1. 1Cut the flank steak against the grain nice and thin.
  2. 2Add cornstarch and baking soda to the steak.
  3. 3Add oyster sauce, soy sauce, a neutral flavored oil, grated garlic, and ginger.
  4. 4Mix well and marinate the meat.
  5. 5Add chicken broth or beef broth, soy sauce, dark soy sauce, oyster sauce, sesame oil, brown sugar, and white pepper to a measuring cup.
  6. 6Mix well to create a sauce.
  7. 7Add the marinated beef to a piping hot wok with some oil.
  8. 8Flatten into a single layer and then let it get a nice sear.
  9. 9Saute aggressively and then remove the meat.
  10. 10Add more oil to the wok, followed by garlic and ginger.
  11. 11Let that get golden brown, and then add shaoxing wine.
  12. 12Add the broccoli, saute, and cover till the broccoli turns a nice bright green.
  13. 13Pour in your sauce and bring it to a boil.
  14. 14Mix equal parts of cornstarch and water and then add to the broccoli.
  15. 15Once the sauce thickens, add back in your beef.
  16. 16Add in your noodles, previously boiled.
  17. 17Saute well.
  18. 18Add green onion.

Tips

  • Cut the flank steak against the grain, nice and thin, to shorten the muscle fibers for a tender bite.
  • Cornstarch and baking soda is the best duo to lock in moisture.
  • Dark soy sauce is mainly for color.
