First, make the crumble topping.

Add 50g of butter, 50g of plain flour, 20g of oats, half a teaspoon of nutmeg and 50g of caster sugar to a food processor.

Blitz it all until it becomes a nice biscuit crumb texture.

For the muffin mix, add 100g of soft butter to a bowl and whisk it.

Add 250g of readymade custard to the butter and whisk it all together.

Add two medium eggs to the mixture and one tablespoon of homemade vanilla, then whisk well.

Add 350g of plain flour and 150g of caster sugar to a large bowl.

Add one generous tablespoon of baking powder and about a teaspoon's worth of mixed spice to the dry mix.

Add 290g of stewed apple to the dry mix.

Mix the dry ingredients with the stewed apple.

Add the wet mix into the dry mix and combine well.

Add a generous scoop of the muffin mixture into each tulip case.

Add almost a tablespoon of the crumble topping to each muffin.

Cook the muffins in a 180°C fan oven for about 25 minutes, or until a skewer comes out clean.

Tips
What's left from the crumble can be stored in the freezer.
Feel free to add cinnamon instead of mixed spice.
