Apple Crumble Custard Muffins

Directions

  1. 1First, make the crumble topping.
  2. 2Add 50g of butter, 50g of plain flour, 20g of oats, half a teaspoon of nutmeg and 50g of caster sugar to a food processor.
  3. 3Blitz it all until it becomes a nice biscuit crumb texture.
  4. 4For the muffin mix, add 100g of soft butter to a bowl and whisk it.
  5. 5Add 250g of readymade custard to the butter and whisk it all together.
  6. 6Add two medium eggs to the mixture and one tablespoon of homemade vanilla, then whisk well.
  7. 7Add 350g of plain flour and 150g of caster sugar to a large bowl.
  8. 8Add one generous tablespoon of baking powder and about a teaspoon's worth of mixed spice to the dry mix.
  9. 9Add 290g of stewed apple to the dry mix.
  10. 10Mix the dry ingredients with the stewed apple.
  11. 11Add the wet mix into the dry mix and combine well.
  12. 12Add a generous scoop of the muffin mixture into each tulip case.
  13. 13Add almost a tablespoon of the crumble topping to each muffin.
  14. 14Cook the muffins in a 180°C fan oven for about 25 minutes, or until a skewer comes out clean.
