1Start by seasoning the chicken with avocado oil, Miss Tab's very good garlic seasoning, roasted garlic powder, onion powder, a little bit of Tony's, Badia Complete Seasoning, and half a packet of Sazon.
2Mix all the seasonings into the chicken thoroughly, ensuring it gets under the skin as well.
3Set the seasoned chicken aside to marinate.
4Prepare the carrots by cleaning them with a wet Scrub Daddy sponge.
5Cut off the ends of the carrots.
6Slice the carrots into quarter-inch rounds.
7Sear the chicken, skin side down, in a pan until golden brown, then flip and cook for one more minute.
8Once seared, turn the heat down and remove the chicken from the pan, setting it aside.
9Add a bit of butter to the same pan.
10Sauté the chopped onions and carrots in the butter.
11Grate in two cloves of garlic.
12Add garlic butter and herb seasoning and a pinch of salt to the sautéed vegetables.
13Once the onions are soft, add about two cups of Basmati rice to the pan.
14Season the rice again with a little Sazon and garlic butter and herb seasoning, and toast the rice.
15Pour about three to three and a half cups of chicken broth into the rice and vegetables.
16Once the liquid comes to a boil, add the chicken back into the pan.
17Reduce the heat to low, cover the pan, and cook for about 20-25 minutes.
18In a separate pan, melt butter for the garlic butter cream sauce.
19Grate in some garlic into the melted butter.
20Add heavy cream to the garlic butter.
21Season with garlic butter and herb seasoning if you have it.
22Grate in some Parmesan cheese.
23Mix well and add a little more Parmesan and some of the leftover chicken broth.
24Taste the sauce to adjust seasoning.
25Turn off the heat completely and add fresh parsley to the sauce.
26Pour the garlic butter cream sauce over the cooked chicken and rice.
