Coffee Fermented Hot Sauce

Directions

  1. 1Brew coffee using a French press, plunge it and decant into a jug.
  2. 2Add enough salt to make a 3% coffee brine and let it cool completely.
  3. 3Grab your chilli of choice, remove the tops, and cut in half.
  4. 4Place them in a sterilized jar with peeled garlic cloves.
  5. 5Pour the cold coffee brine to completely cover the chillies and garlic.
  6. 6Seal the jar and let it ferment for a week.
  7. 7After a week, drain the chillies and garlic through a sieve, reserving the coffee brine.
  8. 8Place the chillies and garlic into a blender with a splash or two of the coffee brine and a drizzle of apple cider vinegar.
  9. 9Blitz everything together until smooth, then pour into a sterilized bottle.
  10. 10Heat the coffee hot sauce in a saucepan with a touch of butter.
  11. 11Pour over some chicken wings, toss to fully coat and serve with a little extra sauce for drizzling.

  • 1 drizzle apple cider vinegar
  • 1 touch butter
  • 10 chicken wings
