Directions

Brew coffee using a French press, plunge it and decant into a jug.

Add enough salt to make a 3% coffee brine and let it cool completely.

Grab your chilli of choice, remove the tops, and cut in half.

Place them in a sterilized jar with peeled garlic cloves.

Pour the cold coffee brine to completely cover the chillies and garlic.

Seal the jar and let it ferment for a week.

After a week, drain the chillies and garlic through a sieve, reserving the coffee brine.

Place the chillies and garlic into a blender with a splash or two of the coffee brine and a drizzle of apple cider vinegar.

Blitz everything together until smooth, then pour into a sterilized bottle.

Heat the coffee hot sauce in a saucepan with a touch of butter.

Pour over some chicken wings, toss to fully coat and serve with a little extra sauce for drizzling.

1 drizzle apple cider vinegar
1 touch butter
10 chicken wings
