Directions
- 1Add one sliced onion to a hot oiled pan, add some salt and pepper, and sauté until caramelized.
- 2Set aside the caramelized onions.
- 3Add four tablespoons of butter to the pan. Once melted, whisk in four tablespoons of flour to make a roux.
- 4Add three cups of whole milk, whisking constantly, and bring to a simmer for two or three minutes until thickened.
- 5Set aside the sauce.
- 6Grease a 9x13 baking dish with some butter.
- 7Peel three pounds of potatoes, slice them thinly, and put half of them in a layer on the bottom of the baking dish.
- 8Add half of the caramelized onions.
- 9Add eight to ten pieces of crushed bacon.
- 10Add half of an eight-ounce block of shredded cheddar cheese.
- 11Drizzle half of the sauce on top of the cheese.
- 12Repeat the process: potatoes, onions, bacon, cheese, and the rest of the sauce. Cover with foil and bake at 350 degrees for one hour.
- 13Remove the foil and bake for twenty to thirty more minutes.
- 14If desired, add green onions on top.
- 15Serve with sour cream and hot sauce on top.
