Directions

  1. 1Add one sliced onion to a hot oiled pan, add some salt and pepper, and sauté until caramelized.
  2. 2Set aside the caramelized onions.
  3. 3Add four tablespoons of butter to the pan. Once melted, whisk in four tablespoons of flour to make a roux.
  4. 4Add three cups of whole milk, whisking constantly, and bring to a simmer for two or three minutes until thickened.
  5. 5Set aside the sauce.
  6. 6Grease a 9x13 baking dish with some butter.
  7. 7Peel three pounds of potatoes, slice them thinly, and put half of them in a layer on the bottom of the baking dish.
  8. 8Add half of the caramelized onions.
  9. 9Add eight to ten pieces of crushed bacon.
  10. 10Add half of an eight-ounce block of shredded cheddar cheese.
  11. 11Drizzle half of the sauce on top of the cheese.
  12. 12Repeat the process: potatoes, onions, bacon, cheese, and the rest of the sauce. Cover with foil and bake at 350 degrees for one hour.
  13. 13Remove the foil and bake for twenty to thirty more minutes.
  14. 14If desired, add green onions on top.
  15. 15Serve with sour cream and hot sauce on top.
