Add one sliced onion to a hot oiled pan, add some salt and pepper, and sauté until caramelized.

Set aside the caramelized onions.

Add four tablespoons of butter to the pan. Once melted, whisk in four tablespoons of flour to make a roux.

Add three cups of whole milk, whisking constantly, and bring to a simmer for two or three minutes until thickened.

Set aside the sauce.

Grease a 9x13 baking dish with some butter.

Peel three pounds of potatoes, slice them thinly, and put half of them in a layer on the bottom of the baking dish.

Add half of the caramelized onions.

Add eight to ten pieces of crushed bacon.

Add half of an eight-ounce block of shredded cheddar cheese.

Drizzle half of the sauce on top of the cheese.

Repeat the process: potatoes, onions, bacon, cheese, and the rest of the sauce. Cover with foil and bake at 350 degrees for one hour.

Remove the foil and bake for twenty to thirty more minutes.

If desired, add green onions on top.

Serve with sour cream and hot sauce on top.
