Directions

  1. 1Prepare the ingredients: chop onions into slices, and make a puree of four onions, ginger, and garlic in a blender.
  2. 2Heat mustard oil in a pressure cooker until it starts smoking. Then, add sliced onions and cook until they are golden brown.
  3. 3Add whole spices to the oil: nutmeg, mace, star anise, big cardamom, small cardamom, cloves, cinnamon, and black peppercorns.
  4. 4Add the onion-ginger-garlic puree and cook for 5 minutes on medium flame.
  5. 5Add mutton, Kashmiri red chilli powder, and turmeric powder. Mix well and cook for 5 minutes on medium flame.
  6. 6Add tomato-green chilli puree and salt. Mix well.
  7. 7Cook for 5 minutes on high flame, covered.
  8. 8Add coriander powder, roasted jeera powder, meat masala, and garam masala. Mix well and cook for 5 minutes on high flame, covered.
  9. 9Add water (about 1.5-2 cups), cover, and cook for 4-5 whistles on high flame, then reduce the flame to low and cook for 3-4 more whistles.
  10. 10Add kasuri methi, grated nutmeg, and kewda water. Mix well and garnish with coriander leaves.

  • 1 tsp Roasted jeera powder
  • 1 Tbsp Meat masala
  • 1 tsp Garam masala
  • 1 tsp Kasuri methi
  • 1 tsp Kewda water
  • 1 handful Coriander leaves
