- 1Zest the lemons.
- 2Juice the lemons.

- 6Add the lemon sugar mixture to the stand mixer.
- 7Mix until creamy.

- 9Add vanilla extract to the mixture.
- 10Add flour and baking powder to the mixture.
- 11Mix until a dough forms.
- 12Scoop the dough using an ice cream scoop.
- 13Roll the dough into balls.
- 14Roll the dough balls in sugar.
- 15Place the dough balls on a baking sheet lined with parchment paper.
- 16Bake the cookies in the oven.
- 17Take the cookies out of the oven and flatten them with a cup.
