- 1Dice about 5-8 Granny Smith or Honeycrisp apples using a dicer for better consistency.
- 2Melt two sticks of unsalted butter in a pan.
- 3Add the diced apples to the pan with the melted butter.
- 4Season the apples with ground cinnamon.
- 5Add about one cup of brown sugar to the apples.
- 6Squeeze fresh lemon juice over the apples for balance.
- 7Mix the apple mixture thoroughly.
- 8Cover the pan and cook for 5 minutes to allow the apples to render down.
- 9Add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) to the apples to thicken them into a filling.
- 10Mix until the apple filling thickens.
- 11Allow the apple filling to cool down completely.
- 12Pour two to three boxes of vanilla Jell-O pudding mix into a bowl.
- 13Add 3 cups of milk per box of pudding mix (total 9 cups) to the bowl.
- 14Stir the pudding mixture.
- 15Sprinkle in some ground cinnamon into the pudding mixture.
- 16Add two to three spoonfuls of the apple filling juice to enhance the pudding flavor.
- 17Stir the pudding mixture again.
- 18Cover the pudding mixture with plastic wrap and allow it to get thick and cold.
- 19Once thick, add 1 1/2 cups of whipped cream to the pudding.
- 20Fold in the whipped cream with a spatula until well combined.
- 21Start assembling the dessert by placing a layer of Chessman cookies at the bottom of a baking dish.
- 22Spread an even layer of the vanilla pudding over the cookies.
- 23Add a layer of the apple filling on top of the pudding.
- 24Sprinkle crushed vanilla wafers and crushed Chessman cookies over the apple filling.
- 25Repeat the layers: pudding, apple filling, crushed cookies.
- 26Finish with a layer of Chessman cookies on top.
- 27Drizzle caramel sauce over the top layer of Chessman cookies.
- 28Refrigerate the dessert overnight to allow it to set.
